Banana Jam

It started with my cousin who brought back the Banana jam from Mauritius when he was there for his honeymoon. It was really weird looking at the small bottle of jam which he brought back then. But it tasted rather unique and quite nice actually. I started browsing for the recipe of making the jam shortly after that.
This is my first attempt on the recipe. It didn't really turn out as well as the writer mentioned hers to be. But not too bad on my first try - though a little too tough as it was too thick.

Instructions:
- Put brown sugar, sugar, lime zest and lime juice in a small sauce pan. Bring to boil.
- Add the smashed bananas and reduce heat to medium low
- Cook, uncovered for 45 minutes, breaking up the bananas from time to time
- Remove from heat and add the butter and a pinch of salt. Stir until butter melts
- The mixture thickens as it cools
- Place in a ball jar and store in the fridge
